Today our Principal Espe Kelly will be sharing some of her favorite tools for creating her around the world dishes.  She will also share some recipes that she thought would be so hard but were surprisingly easy.

POTS AND PANS

Picture
My top two pots and pans are the Le Creuset Dutch Oven and a cast iron pan.  The dutch oven is great for soups, stews, curries, chili, deep frying and you can even bake bread in it.  I use it like a slow cooker as well.   The cast iron pan will need to be seasoned but once it is it will be a non stick pan.  I use this pan for sauteing, bacon, eggs, and for cooking meat that I want to brown first then I can put the pan in the oven to finish cooking.

You can buy the dutch oven in any cooking supply stores or order online.  I have even seen them at places like Home Goods.  Then there are garage sales that may have some. These are expensive but worth every penny and you really only need one.  HEre is the amazon link:  https://www.amazon.com/Creuset-Signature-Enameled-Cast-Iron-2-Quart/dp/B00771FULY/ref=sr_1_3?crid=2GKFX17SYB16R&dchild=1&keywords=le+crusette+dutch+ovens&qid=1588713116&sprefix=le+cru%2Caps%2C176&sr=8-3

You can pick up a cast iron pan at any hardware store or follow amazon link: https://www.amazon.com/Lodge-Skillet-Pre-Seasoned-Ready-Stove/dp/B00006JSUA/ref=sxin_7_ac_d_rm?ac_md=0-0-Y2FzdCBpcm9uIHNraWxsZXQ%3D-ac_d_rm&cv_ct_cx=cast+iron+skillet&dchild=1&keywords=cast+iron+skillet&pd_rd_i=B00006JSUA&pd_rd_r=895d7265-408c-4db2-ba44-4b3733702255&pd_rd_w=KA9SK&pd_rd_wg=760P6&pf_rd_p=a0516f22-66df-4efd-8b9a-279a864d1512&pf_rd_r=VAX7J0STW2RNDRJR0348&psc=1&qid=1588713343&sr=1-1-12d4272d-8adb-4121-8624-135149aa9081

GARLIC PRESS

This garlic press was recommended to me by my friend Karen Redmond at karenfavorites.com.  This is one of my favorite tools.  Makes using fresh garlic so easy.

MEAT TENDERIZER

Picture
Jaccard Meat Tenderizer is my new favorite tool.  This tool pierces 45 holes in one single shot.  This allows for marinating inside a piece of meat, pork or chicken.  Everything comes out so tender and delicious.  This was also recommended by Karen.

INDIA

I made chicken curry and naan bread the other night.  People were impressed with the fact that I made Naan bread so i thought I would share the recipe for India night.  You are going to love it.  Make sure you use all organic ingredients and make sure the yogurt is full fat.  Do not skimp, it is worth it.

This curry is so easy and quick to make.  I promise it will not disappoint.  You can make mild or hot.

Naan Bread Recipe
This 4 ingredient naan bread is way too easy and I swear you will never but store naan bread again.

2 cups all purpose flour
2 tsp baking powder
1/3 tsp salt
1-1/4 cup plain yogurt

Mix all ingredients, kneed for a few minutes then cut into 6 pieces roll and fry in a cast iron pan or a griddle will work as well.  That's it.

Tip:  Keep extra flour on hand.  Add if needed so the dough doesn't stick to your hands.
Suggestion:  Brush with garlic butter as soon as you take it off the pan and sprinkle with a little salt.
